What’s Cookin’ at Heritage Shores?

Heritage Shores Executive Chef, Frank Dubinski (on the right) and Chef Assistant, Harry Daras (on the left) competed in their first cuisine competition at the Ocean City Convention Center during the Annual Hotel, Motel and Restaurant Show held on March 8, 2010. The competition was sponsored by the Delmarva Chef & Cooks Association.

Frank and Harry had 2 hours to complete 4 portions of each; a signature appetizer and an entrĂ©e utilizing 4 regional cuisine items including bone in chicken thighs, seaside salt oysters, littleneck clams and boursin cheese. Frank created two recipes that highlighted his own unique style that until now has only been experienced at the Passwaters Restaurant located at Heritage Shores in Bridgeville Delaware. Frank’s recipes featured New England clam chowder garnished with maple laced bacon crumbles and julienne potato sticks and range free chicken thighs with oyster stuffing accompanied by whipped parsnips and boursin cheese.

Frank and Harry concluded the event scoring 5th out of the 10 competitors. We are pleased to have Frank and Harry as proud members of the Heritage Shores Team, this accomplishment only emphasizes their dedication and skill in the culinary profession.
